This salmon pasta bake is from More Quick and Easy Homemade Meals: Simple Tasty Dishes for the Busy Person by Emma Long and is reproduced here with kind permission. Like all of her 100 recipes it is effortless to make and can be prepared within minutes and produces a tasty treat and filling meal.

We easily quadrupled the ingredients to make a meal for four and used fresh salmon fillets rather than tinned. This is the added benefit of Emma's cookbook, her recipes can easily be adapted. This is her version for one person and the use of farfalle pasta provides additional visual interest.





The Drummer Boy

The Drummer Boy is my latest novel about the ghost of a Gordon Highlander Drummer Boy from the Battle of Waterloo who haunts a modern day army nurse.



Chapters take place in modern day Aberdeen, at the Noose & Monkey bar and restaurant as well as His Majesty’s Theatre and Garthdee. Other scenes take place at Tidworth and during the Napoleonic War.

Ingredients


100g farfalle pasta

30g plain flour

70g grated cheddar cheese

350ml whole or semi skimmed milk

1 teaspoon of Dijon mustard

Half a teaspoon of cracked black pepper

1 tablespoon of soft cream cheese

1 tin of pink salmon (105g approximately)

1 handful of roughly chopped fresh parsley

2 tablespoons of freshly grated parmesan cheese

2 tablespoons of fried breadcrumbs



Method




In a saucepan of boiling water add the pasta and cook for approximately 12 minutes or according to the instructions on the packet. Drain the liquid and return the cooked pasta to the saucepan.

Make the sauce by placing the flour, cheese, milk, mustard and black pepper into a saucepan. Stir continuously over a medium heat until the sauce thickens.

Add the sauce, soft cream cheese, tinned salmon and parsley to the saucepan that contains the pasta. Mix thoroughly then transfer to an oven proof dish.

Combine the grated parmesan cheese and breadcrumbs in a bowl. Sprinkle this mixture over the top of the pasta, salmon and sauce in the dish.


Place this in the oven and cook at 180C, 350F or Gas Mark 4 for 25 minutes.

Serve with your favourite bread.
